Creamy Ditalini Soup

Pasta is my kind of comfort food. Whatever kind there is, whichever way it is cooked , I never tire of eating pasta. It's the type of food that takes uncomplicated preparations. For me, nothing is more comforting than eating pasta after a long day's work.

One of my favorite Filipino dishes is sopas or creamy macaroni soup. The original recipe calls for macaroni. The last time I visited the grocery macaroni was out of stock and Ditalini was the ones available.I still bought them as I was craving for this dish.







I cook the soup my way. All I  did was boil the pasta al dente. While they boiled, I cubed 1 medium carrot, cut the beans (I used 200g ). Sliced onion and shredded the cabbage ( both medium size).



I heat the oil in a wok. Sauteed the onion. When they turned transluscent, I poured 2 cups of water. The amount  of water depends how much you are cooking. There's only me and my sister but I normally cook for at least five  people as my sister brings the rest to her workplace.

I let the water come to a boil. I  added the diced carrots.
























And the beans.




I boiled it for 5-8 minutes before adding the shredded cabbage and ditalini. I added a cup of cream and 2 cups of milk, salt and pepper to taste.  I covered it and boiled it for a further 3-5 minutes.


This dish is good with toast  or can be eaten on its own:)
