Red Kidney Beans with Tortilla Chips

Church potluck when I was young was a memorable one. It was a regular part of  Sabbath program in Philippines. The good fellowship during meal made Saturday a special day and the home made dishes  brought by each family were something I would look forward to.

One of my mom's favorite dishes to share at potluck was red kidney beans with tortilla chips and topped with shredded cabbage. The dish was a complete meal. Yesterday I made the exact same recipe  for dinner. I opted  to top it with shredded cheddar cheese and the result was even better.







Red Kidney Beans with Tortilla Chips

Ingredients:

150 g red kidney beans
1 onion, chopped
3-4 tomatoes, chopped
2 TBSP tomato sauce
2 TBSP brown sugar
salt
pepper
oil
grated cheddar cheese


Procedure :
Soak the red beans in water overnight. Rinse. Discard the water.

Place the beans in a large saucepan and cover with water. Boil until the beans are soft.  Add water during cooking if necessary. Remove from heat once cooked. Set aside.

 Heat the oil in pan. Saute the onion until soft and translucent.

Add the tomato sauce, tomatoes and beans.Cover and cook for 10 minutes .

Add sugar and let simmer for 5 minutes. Then add  salt and pepper. Simmer for another minute.

Ladle into a plate. 

Serve with tortilla chips and grated cheese.
