What to do with left over grated carrots?




Last year during Christmas time I had three carrot cake orders. After all the baking, I had about 200 grams of grated carrots left. To throw them away was a waste of money so I turned them into delicious patties. These are great as main dish or side dish or as  sandwich fillings.





Carrot Patties

Ingredients:
200 grams grated carrots
2-3 cloves of garlic, minced
half of medium sized onion, chopped
1 egg
 flour
bread crumbs
salt and pepper to taste

Procedure:

In a mixing bowl, mix together grated carrots, garlic, onion, egg, flour, bread crumbs, salt and pepper until it looks like a thick mixture



Shape the mixture into 8 patties. (If you see a lot of moisture in the mixture, you may squeeze them out). Heat the oil in a pan for about a minute. Over medium heat, brown the patties 3-4 minutes on each side. Drain on paper towels.
