It's nice to have a break from eating not-so-healthy stuff. Here is something healthy-ish for a change - a delicious muesli cookie overloaded with oats, nuts and dried fruit. It is sweetened with honey so you get a sweet yet delicate taste. It is a good source of fiber too. Have it for breakfast or as a quick snack or enjoy it with milk before you retire for the night.
Muesli Cookie Recipe:
3 cups muesli
75 g plain flour
100 g butter
100 ml honey
1 egg lightly beaten
Procedure:
Line baking sheet with baking paper.
Combine muesli and flour. Set aside.
In another bowl, whisk together butter, honey and egg.
Add butter mixture to muesli mixture. Mix well. Let rest for 15 minutes.
Roll into balls and place onto cookie sheet 3 cm apart. Flatten. Bake in a preheated 170C oven for 10 minutes. Turn trays halfway through baking. Leave to cool for 10 minutes. Transfer to a wire rack. Repeat the process with the remaining mixture.
