A Not So Rocky Road




I was looking for an old recipe in my  stash of notes when I stumbled upon this rocky road recipe. I did a quick review  and  decided to give it a go. It's so easy to make and that's the kind of desserts  I'm always eyeing for  as I have my hands full all the time.  It's  my only way to get a full days work done.

This rocky road crunch bar is made with high quality dark chocolate.  The walnuts and marshmallows I had in stock were just enough for the amount needed. It was a last minute decision  so I had no extra for garnishing, thus the plain looking top. Well, they still turned out deliciously good, chewy and nutty chocolate bar.

Rocky Road recipe:
250 g dark chocolate
1/3 cup heavy cream ( I used whipping cream)
3/4 cup mini marshmallows ( or big marshmallows if that's what all you have, diced)
3/4 cup toasted nuts, roughly chopped ( I used walnuts)

Instructions:
Line an 8 x 8 inch pan with non-stick baking paper.
Place the chocolate in a dry, clean bowl. Melt the chocolate over a saucepan of  simmering water. (See how to melt chocolate in my other posts).
Heat the cream on low. When bubbles form along the edges, remove from heat. Gradually pour the cream into the chocolate. Whisk slowly until well combined.
Add nuts and marshmallows.Fold to coat nuts and marshmallows evenly.
Pour into prepared pan.
Chill for several hours or overnight  until fudge  is firm enough to cut.
Cut into squares.
