Chocolate Ganache Swiss Roll



Apart from the wedding cake, I was also in- charge of dessert selection for the wedding dinner. One of the cakes I made was this Swiss roll  with chocolate ganache filling. I was making all the baked goodies,  turn down desserts and the wedding related stuff on a tight schedule. What I needed was a quick and easy Swiss roll recipe which would not jeopardize my time. I peeked into BBC and was thankful that it has the easy sponge recipe I was looking for.

For the sponge

Ingredients:
3 eggs
75 g caster sugar ( I cut down to 60 g)
75 g self-raising flour


For the dark chocolate ganache filling:
100 g dark chocolate
100 g cream

Directions:
Melt the chocolate over a saucepan of simmering water.
Heat the cream. When bubbles form along the sides of the saucepan, remove from heat. Gradually pour into melted chocolate. Whisk but keep your movement to a minimum. Chill until it reaches the right spreading consistency.
Preheat the oven to 200C / 400F. Grease and line a 9  x 12 in cookie sheet..

In a bowl of your electric mixer, whisk eggs and sugar until light and fluffy.

Fold in the flour and pour into the prepared tin. Bake for 7-10 minutes until light and springy to the touch.

Remove from the oven. Let cool.

Turn the sponge out onto another nonstick baking paper. 

Spread the ganache filling evenly with  spatula.  Roll the sponge.

Slice and dust with icing sugar.





Serve and enjoy!
