Onion- Horseradish Sauce Quiche
When I got an email from my boss regarding my role at the wedding, I hurriedly went online to look for onion-horseradish sauce quiche recipe - the dish assigned to me. It was not easy. I browsed countless recipes but my search which took hours was not fruitful. I asked the head chef if he could give me a recipe I could follow but even he could not find one online. He gave me a different quiche recipe instead and asked me to modify it. So I made some calculations based from that, modified some ingredients called for and this onion-horseradish quiche was born.
Onion- Horseradish Sauce Quiche:
You need one x 9 inch pie crust
4 eggs
1 cup heavy cream
1/2 teaspoon salt
1/2 teaspoon black pepper
3 Tablespoon horseradish sauce or to taste
1 cup cheddar cheese, grated
1/4 cup emmenthal or parmesan cheese, grated
200 g onion, baked
Procedure:
Chop the onions. Place in a cookie sheet lined with baking paper. Bake for 20-25 minutes at 200 C, turning them every 5 minutes.until the onions are soft.
Lower the temperature to 175 C or 350 F. Pre-bake the pie crust for 15-20 minutes until half baked or until the bottom starts to look flaky and the color starts to brown. Remove from heat. Let cool.
In a large bowl, mix together eggs, heavy cream, salt, pepper and horseradish sauce. Stir in cheese and onion. Pour into the half-baked pie shell. Bake for 25-30 minutes or until the mixture sets.
Slice and serve.
