Post-holiday Eggnog Snickerdoodles Treat



Before the holiday fuss died down, I used up all the leftover eggnog to make post-holiday treats for the resort's nightly turn down service. I did a repeat on some treats I served last year but here's the new addition to my list of delicious eggnog recipes.


The recipe is adapted from tasteofhome.com. After reading the recipe, I decided to modify it to suit the flavor I was after.

Recipe:
1/2 cup unsalted butter, softened
1/2 cup shortening
2 cups sugar
1 egg
1  cup eggnog
5 1/2 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon ground nutmeg

For rolling, you will need:
1/3 cup sugar
1/2 teaspoon ground nutmeg

Procedure:
1. Sift together all-purpose flour, salt, baking soda and spices. Set aside.
2. Cream butter, shortening and sugar until light and fluffy.
3. Beat in egg and continue beating until mixture is well blended.
4. In three batches, add flour mixture alternately with eggnog beating well after each addition.
5. Mix together nutmeg and sugar in a bowl. Shape dough into 1-inch thick balls.Roll in nutmeg mixture.
6. Place 2 inches apart on an ungreased baking sheet. Flatten slighty.
7. Bake in a preheated 350 F oven for 10-12 minutes or until just slightly browned. Cool in pans for a couple minutes and transfer in a wire rack to cool completely.
