We looked beyond the traditional Christmas cake this year as we got tired of the same Christmas treats we have had for the last two years. My manager wanted something simple but delicious, a cake that is moist and flavorful. She asked for a carrot cake as a replacement. Her decision did not disappoint. It was a crowd-pleasing dessert everyone loved at the event.
I am a huge fan of white Christmas so for my showpiece, I created my own winter wonderland.With all these nostalgic white Christmasses I've had in the past, I decorated the cake with some of my favorite things in winter to achieve that wintry vibe. ( I loved building snowman).
Here's my fondant-covered carrot cake.
I prepared individual slices for the crowd for easy handling and eating. The carrot cake topper I made with fondant was a success. It took me a good hour to finish but the result was worth the pain.
